Yield per hectare: 88 – 92 hectolitre.

Harvest: half – end of September. Rigourously
Techniques: DMR (“Double Maturation”): an over-ripening
in the plant before to the collection. It consists
in cutting the fruiting cane. This causes a maturation
due to the increase of the concentration of sugars,
and a breathing of the grape’s organic acids that
gives the fruit a very intense flavour.
The system is applied only on a portion of the
vineyard, because these grapes are unbalanced
from the chemical and organoleptic point of view.
Sparkling Process: Vinification through maceration
without sulfur dioxide. We use a exclusive sparkling
method that goes directly from the must to sparkling
wine, with only one fermentation instead of two:
Il Colle Method ®. It permits to reduce the amount
of residual sulfites in the bottle and they are used
only before bottling.
Temperature: controlled temperature max. 15° C.
Yeasts: selected spumante yeasts.
Alcohol content: 11% vol.
Residual sugar content: 8 – 10 grams per litre.
Total Acidity: 6,8 – 7,2 grams per litre.
PH: 3.05 – 3.25
Colour: pale straw yellow with green hues.
Bouquet: fresh and variegated bouquet, scents
of fruits which reminds to pear. Green and
flowery hints. Typical aromatic scents.
Taste: dry, smooth and slightly acidic.
Shelf-life: within 12 months from bottling.
Service: 8° C. It can be served with fish
starters, especially oysters and shellfish.
Suggested glass: stem glass.
