WINE MAKING
The winery of “Il Colle” has recently been heavily restructured, expanded and enriched with state-of-the-art technology , exalting the quality level and underlining the healthy overall state of the company.
Today the beating heart of the winery can be found under floor level in ample underground areas the existence of which is impossible to discern from the outside and where order, rationality, attention and modernity reign. We are aware however that results are hardly ever obtained by chance so our attention to detail never wavers!
The wine making area has been provided with innovative machinery. Innovation is a must together with respect for the natural product, as is the case with the pressing system, that is carried out in different levels so as to safeguard the integrity of the grapes: this system ensures the high quality of the final product.
Quality control is carried out by the specialized enologists or our internal laboratory, as well as by an external analytical laboratory. We apply process of production as requested by the certification ISO 9002 and by the HACCP method.
